Don’t you just love food cooked in the slow cooker? There’s hardly any effort to prepare, but food always comes out sensational. Good things really do come to those who wait!
This recipe shared to us by the One Pot Chef only uses the slow cooker, but you get to enjoy really delicious chicken and tasty vegetables. It’s so easy to prepare and everyone is sure to love it.
2 pounds of chicken breast fillets
600g small red potatoes
250g baby carrots
1/4 cup olive oil
1/3 cup lemon juice
1 tsp dried oregano
2 tsp onion powder
2 tsp crushed garlic
1 tsp salt
Combine the olive oil, lemon juice, dried oregano, onion powder, crushed garlic, salt, and pepper all together. Stir well.
Remove the skin from the chicken, peel the carrots, and slice the potatoes into quarters.
Put the chicken in the slow cooker first, and then the carrots and the potatoes. Pour the herb marinade over it. Cover and set it to 4 hours on high setting, or 8 hours on low setting.
